I don't know if it worked or not - I have not received a final decision from CIC yet. We ended up going with just a plain piece of paper with our signatures and one witness signature. We didn't notarize anything. However, the money was transfered from my husband to me, and we are planning to move together. I don't know whether it would work for funds from parents.

As per the requirement of OINP, I have demonstrated cash balance available in my savings account XXXXXX maintained at XXXX as the proof of settlement fund and I am writing this letter to explain the deposit transaction of Rs.XXX- dated 23.02.2016 in my account statement.
My father, XXX gifted me Rs. XXX through Cheque No. 12345 dated 22.02.2016 drawn on XXX bank and it was transferred to my account on 23.02.2016. The gift was made out of his personal savings and substantiated by a Gift Deed which I have presented along with this letter. The Further, my father made the gift purely due to love and affection towards me. He doesn’t expect this money back and I am entitled to use the fund as per my wish.
