I landed up adding my husband's surname to mine on my passport after marriage. However, all my documents are in my maiden name. Will I need an affidavit regarding the name change or just the marriage certificate will suffice for the Canadian PR process? Thanks!

Not yet.
I am pretty sure you need to have your original passport changed to the name in order to get the PR in that name- I believe they will only issue documents that match your original travel document. I may be wrong!
I changed my name in my PR card AFTER I was already a PR, it was simple enough.
