For a new couple moving to Toronto where can I rent short term, I will be looking for a job so I can't commit to a long term rental
and need somewhere accessible to most areas. Budget 1-1200k per month.

How did other people first rent when they moved to Toronto?

try to call/contact JIAS - Jewish Immigrant Aid Services, they might help with some on-place orientations, maybe even accomodation advises.
Many people come here for school, I knew some people who rented though UofT housing program, it was a downtown location for very minimal payments. Short term accomodation are usually much more expensive than long term. You can try to rent a basement in a house for like 800-1000 downtown core and usually landlords who rent out basements are more flexible with terms.
