No, unfortunately she can’t work after her current permit expires. She is not benefit from the implied status since CIC does not receive a complete and correct application (including applying to the correct office). She has to apply for a visitor visa if she wants to continue staying in Canada; otherwise, she will have to leave.
Don’t wait until the current permit expires. She will have to wait much longer to get an open work permit if she’s out of status.

If you initially submitted the sponsorship application to the correct office, she should have had a chance to work. (If she received AoR before her current work permit expires)

You should apply for a visitor visa now to keep your status in Canada because your current visa is going to expire in two days, and you will not get the AoR before that.
