She does not qualify for a study permit as your dependent. She could come as a visitor and would not have access to heathcare or be able to work or study.
If she wants to study, she would need to apply independently for a study permit, going through the exact same process as you have to, i.e. acceptance to a school, proof of funds etc.
No that would not be a good idea since she has to prove her strong ties to her home country and that she will not stay in Canada. What is your background? Are you doing an advanced degree like a PhD. Given your age and family there may be concerns about whether you are a genuine student and you may struggle to get a study permit.

I suspect you will have a lot of difficulty being approved for a study permit. If you are already an entrepreneur there is no need to spend large amounts of money studying abroad and disrupting your family life to study in Canada only to return home after your studies. Your case is very likely to be identified as not a genuine student. You should still apply but I am warning you that it is not as easy as you think and families of international students are not guaranteed visas/permits to accompany the student to Canada. If you do get accepted a few of your children will have to try and get student permits to study in a college/university in Canada and will have to pay international fees.
Yes they should be if you are approve for a study permit. Once they graduate high school they would need their own study permit. Your wife should be getting a SOWP not a TRV if she wants to remain in Canada. You still need to get a study permit which is much harder than you may think.
