Last week I had my interview in Montreal and received my confirmation of permanent resident. One of my partners family members gave us a 3 day trip to Chicago for Christmas and the trip is supposed to start in 2 weeks. Obviously, I will not receive my permanent resident card until we are supposed to leave for Chicago. I am a German citizen and applied under the inland family sponsorship. As my work & travel visa expired a month ago, I currently in Canada only with a visitor visa. My question now is if I can leave Canada without having received the PR card?

You can leave without issue. To re-enter, you will need to cross at a land border in a private car or on foot. You will not be able to board a commercial carrier without your PR card or a PRTD.
OP will not be able to get a PRTD in 3 days.

Firstly, if you have done your landing interview you are now a PR. You can no longer use work or visitor status. So you are currently in Canada as a PR, not as a visitor.
As mentioned, your only option is to travel back to Canada via USA land border. If you simply bring your COPR, then at the border CBSA can easily see your PR status and will allow you entry.
