So I’m from Ireland and went to Canada in the Summer of 2017 for 3 months working part time as a dishwasher.I was on the two year IEC visa and went travelling for a few weeks during those three months. 3 years later and I have graduated from Uni and want to go on the Visa again except this time for the full 2 year period. Is this possible? It doesn’t seem clear to me on the websites if I’d be able to do this. Thanks in advance

It's not possible for you to get a Working Holiday visa a second time. You are only eligible for one participation. If you want to participate in the IEC program again, it would have to be under the Co-Op stream which requires to be a student coming to Canada to complete an internship.
