If I fly to Canada and wait for my Letter of introduction whilst in Canada, will I be able to pick up my work permit from the airport/immigration or will I have to fly back out to the UK to come back to Canada to receive my IEC work permit?
 
No you can take your LOC to the Canadian/US border and get your work permit there. Not sure if ou can do it at an airport.
