You show contracts, receipts, pay stubs, reference letters, incorporation (if you have your own business number) etc. As stated on the Express Entry site for mandatory documents,
if the applicant is self-employed, articles of incorporation or other evidence of business ownership, evidence of self-employment income and documentation from third-party individuals indicating the service provided along with payment details (self-declared main duties or affidavits are not acceptable proof of self-employed work experience).

You are the employer. If you can’t get contracts, receipts and/or contracts, then what do you have to prove work. You have to have some paper trail that you are meeting the requirements of the NOC.
