We are going through an Outland sponsorship from the US. We are both living in the US and will until all paperwork goes through. We are just trying to figure out how to plan life since we don’t know how long this process will take. Once everything is approved, how long do we have before we have to move/land in Canada?

You may have two different questions here without realising it!
How long you have to 'land to declare PR' is one question. How long you have to 'land as a settler' is another question! You can do both together OR you can land and declare PR first, then land as settler later.
You must 'land and declare PR / activate your CoPR' before the expiry date shown on your CoPR. You can then turn around and go back to the US and finish selling up. You can then land at a later date (i.e. months or a year later) and 'land as settler' when you must have your 'goods accompanying / goods to follow' sheets stamped by CBSA.
What is critical here is the expiry date on the CoPR.
Yes, they NORMALLY make this 1 year from the date of the medical, but in a number of cases the expiry date given is more than 1 year from that date. The date given is entirely at the discretion of CIC. AIUI, if you land within the expiry date of the CoPR, then they won't ask for a new medical (assuming they have already have issued the CoPR).
If you do not land by the date on the CoPR you will have to reapply and start again from scratch. I am not sure if it is possible to ask for an extended expiry date on the CoPR (I have never heard of this).
