I saw a comment on here about someone submitting 4 years worth of NOAs/T4s. My husband's CEC-relevant experience was from Jan 2013 - Jan 2014 and we only submitted our most recent NOA/T4s (ie: for Jan 2013 - Dec 2013). We also submitted paystubs because at the time of application in Feb, we didn't yet have T4 or NOA.
Should we have also sent our previous T4s/NOA (ie: from Jan 2012 - Dec 2012), even though we moved to Canada in September 2012 and my husband is not claiming any of of his work experience from Sept 2012 - Dec 2012 for CEC purposes.
I'm hoping that my MR request will come in the next 2 months, and if I can send scans of my documents now to avoid future delays, obviously I will.

Not required, you dont need to send additional documents unless you are asked for. Providing the NOA and T4 for the period of work experience is sufficient.

Anyone submitted pay stubs as well? If I can't provide T4s or NOA from 2014, should I include my Pay stubs for this year? or should employment letter be sufficient?
I have the T4 and NOA from 2013, but my qualified work experience extends to this year as well.

Pay stubs are supporting documents to strengthen your case that you are indeed working for the employer and are getting paid, for the year 2014, you get attach the pay stubs, that should be fine.
