I just have graduated from College with a degree in Business Administration. However, I have been working as Restaurant Assistant Manager for 8 years. Do I need a degree to claim the occupation as Restaurant Assistant Manager?

I do not think so, not for Restaurant Assistant Manager. There are many people who worked many years as waiter without a degree and have become even managers. That's what I think. Let's wait to see if anyone else agrees.
If you look at the description in the NOC for restaurant manager at http://www5.hrsdc.gc.ca/NOC/English/NOC/2006/QuickSearch.aspx?val65=0631 you will see that is says degree usually required but not always so you don't need it.
