I got admitted into a good Canadian University for my MS CS Thesis fully funded.
Tuition fees for 1 year are 1611*3 + 10000$ as living expenses.
I have got a scholarship of 14500$ cad per year.
My parents have retired and the latest ITR they filed was 3.8(mother-textile work) 2.8(father-farming income).
I don't have enough funds to show support for 1-year food and accommodation, I am thinking to take a loan to pay for GIC.
We have immovable assets, but the net income of the family is significantly low. I need guidance about the sponsor letter, can I mention both my parents, brother and university in it?
I could not make sure about the "identity of the sponsor". It basically might be his Citizen ID Card and Passport only, but VO (by somehow) could ask for his Labor Contract to know the source of his income. So you should listen to @wonderbly for opening a loan account with your family's immovable assets as collateral. Sponsored funds from your brother should be the additional added to strengthen your overall proof of funds.

Your best bet would be to loan money for GIC and apply through SDS, sort of gives you edge over the other Non SDS but I'm unsure by how much . What is the duration of your program?
I am thinking to file NON SDS with GIC + Scholarship + My Savings(3000$) + Parents Liquid Fund (10000$) + Parent Assets CA report.

You're better off going non-SDS. Waiting for SDS makes no sense as no one knows when the lockdown will be finally lifted. And even when it is, you don't know how quickly you will get an appointment. That means at least 4 weeks lost - 4 weeks in which you could already have your application being assessed and only waiting for Bio and Medicals.
