1.Bank statments for Settlement funds - If this statement shows only the amount balance is that ok? or it has to show the transactions too? Since if we put money in this account for this specific purpose then the money accumulation would be quite recent.

Assets include settlement funds and everything you have mentioned including property, gold, car etc.
You can show a Balance Certificate issued by your bank. If the VO requests for account statements in the future - you should be able to provide that and if that happens - large sums of deposits can potentially raise red flags unless justified.

For second question, I myself have left the assets field blank, and just shown the settlement funds alone (as a bank balance letter + statements). I will find out if that works if and when I get my PER.
