Foreign Work Experience

Hi,

I had a foreign work experience which I didn't mention in my Statement of Purpose when applying for my student visa. Because I got paid cash. So my employer is ready to write to me an experience letter with whatever I want. I might not be able to present any paystub or anything. Should I go for it or shouldn't mention at all.
