Update: With Feb 04- AOR,
Medical (completed on 08 March)
Biometrics completed (3rd May)
Background checking - (In progress as of last month)
Eligibility (Status changed from Not Started to In-progress yesterday).
I guess my profile status is slowing moving

Nope. It isn't slow moving unless you exceed 6 months from AOR.

Medical was Blank in GCKey. And updated in GCkey today i.e May 14 2024

Medical was updated in Gckey on May 13, 2024, and disappeared in Gckey (they have applied for an extension)
and the extension of medical was updated on May 4, 2024. on the tracker (Valid till May 4, 2025)

Medical and eligibility is marked completed in the tracker.

I called them and they told me that everything is good. You just have to wait

FSW Inland
PVO- Ottawa SVO- Sydney
ITA- 21 December, 2023 (Agriculture and Agri-food occupation)
AOR- 19 February, 2024
Medical update- March 26, 2024 (updated on both gckey & PR tracker)
Biometrics- April 12, 2024 (updated on the same day on gckey but not on tracker until I got eCOPR)
Background check- April 23, 2024 (Not updated on both gckey & tracker until got eCOPR)
Final decision- April 22, 2024 (on gckey only showed date but the decision was not visible, on tracker it updated after eCOPR)
Eligibility- May 7, 2024 (was showing as completed on tracker right after medical was updated, on gckey it only updated after eCOPR)
Portal 1 email- April 24, 2024 (replied on the same day)
Portal 2 email- April 26, 2024 (replied on April 29, 2024)
Received eCOPR email- May 7, 2024
