You can be. Its just like, once you are approved for Canada, you have to give away the other one. You can apply for Canada PR and use your US Green Card until the former is approved.
This is not true. There is no rule that says you cannot be PR of both countries as long as you meet the residency requirements of both countries (being present in Canada for 2 years out of 5 years and 1.5 years out of 5 years in the US (since you have an American spouse)). Also, eventually you can become both Canadian and American citizens. There is no law that prevents that.

I do not think it is as simple as that. Just as an example, you can read here. I think it is a tricky situation, which I would like not to face; the issue is that I am almost forced to apply for Green Card, since IRCC cannot provide any timeline for the Canada PR processing....

Totally agree. I did not say that it's easy. I just said that it's possible and legal. You do not have to give up one of the PRs if you do not want to.
Currently, IRCC is prioritizing CEC applications only. All others will have to wait. However, FSW and PNP applications are getting PPR and e-COPRS, but its slow.

My company allows for remote work which means that I will potentially be able to go to Canada on a tourist visa (eTA) for a while and work from there. As far as I understand, since it's not a Canadian related entity I don't need to have a work visa to do this? Would I still need to inform the IRCC about this? I.e. that I am in Canada for a few months?
Also, if COPRs get processed for outland applications while I am there, would I be able to just stay in the country and get it "stamped" or would I need to go back to sort it out? (I have an EU passport so no counterfoil required as far as I know)
My application AOR Feb 2020 is BC EE along with my spouse both inland.
I recently changed employment and requested/submitted post nomination request for bc pnp. Am I also supposed to send my new offer of employment to IRCC via Web forms?
