Although 3 years gives you the maximum points in the EE system, you still need to achieve a minimum of 67 eligibility points: http://www.cic.gc.ca/english/immigrate/skilled/apply-factors.asp
Therefore, you may need to include more than 3 years of experience to get to 67.
So my advice would be include all the experience you can get reference letters for. Having lots of paper work is ok as long as it's relevant.

The link you gave shows your travel history only. If you have included holidays its ok, however, address history is mainly concerned with fixed, long term addresses not temporary addresses.

My understanding is that you can apply and claim points as a single applicant. All you will need to do is submit legal documents to show that you have filed for divorce and it is currently being processed. Once the divorce process is completed you can submit the certificate through a CSE.
