There are no stamps on the passport when you travel between EU countries.

While selecting the NOC, the duties and responsibilities mentioned in the NOC should be a close match with the actual duties and responsibilities carried out by you at the respective job. You need not match the duties and responsibilities word by word, but the idea is to have the closest match in terms of the spirit of the duties and responsibilities (at least 60%-70% match).
Also, NOC should be selected on the basis of the match of actual duties and responsibilities carried out by you rather than the designation match in the NOC list. If you are not sure of your NOC, write to noc@workingincanada.gc.ca with your job title, duties and responsibilities and educational qualification, they will help you find the closest fit.

About the proof of funds, would it matter how long one has maintained the required balance in one's account? I mean if I get a huge amount credited to my account but can proof it's my money and not borrowed. Would that be okay?

There isn't one.
You just have to score 60 in the SINP point assessment grid (which can be found here: http://publications.gov.sk.ca/documents/310/85142-SEE%20Guide%20(06-May-16).pdf), and have work experience in an in-demand NOC.

I have a question. I have worked as a teaching and research assistant in a University in Canada for more than 2 years. Total amount of hours I have worked is 2084. I was a full time student while working. Now my question is, which option I should select in the employment history section related to work permit and LMIA? There are three options: 1) Work permit and LMIA not needed; 2) Work permit needed but LIMA is not needed; 3) Work permit and LMIA both are needed.
