ECA for spouse is not mandatory. But, if you want to claim points for your spouse's foreign education, then you need to have the ECA done for spouse as well. You get up to a maximum of 10 points for spouse's education supported by ECA.

The number of hours needs to be mentioned, unless you have other supporting documents which mentions the same. This is required for them to be sure of the fact that you were actually working full-time/part-time depending on what you claim in your application.
Regarding salary, if you can provide the salary slips/pay stubs and bank statements which shows salary credit.
For previous position, you can show offer letter, appointment letter etc. For the promotion, you can show documents for performance evaluation, emails or communication etc which will substantiate your claim.
In my opinion, you may still be asked to submit reference letter with all the above details, unless and until you have reasons with documentary evidence to prove why you cannot get the reference letter in the required format. Since you have already got the letter, you can request your company to issue you a fresh letter stating that the first letter will not be accepted citing the relevant reasons. Give it a try, if not try all fore mentioned options and submit it along with a Letter of Explanation.

My CRS score is 356 and NOC is 0124. Another NOC 6221 is also applicable to me by looking at the Job responsibilities.
My doubt is whether one can create two EE profiles with two different NOC or not.

Yes, you can update your Express Entry profile till you get your nomination (in case of PNP) or till you get ITA.

I submitted my Express Entry via MyCIC and they told me our profile is ineligible on grounds that I do not have a sufficient score. Of course I ran an eligibility check before applying and they told us it is fine!! They didn't give us the score now so that we know how many points we are short.
How can this be?
I am the main applicant and here are my details:
- Bachelor's Degree from USA (accredited by WES) - ECA completed!
- IELTS scores (R:8.5, L:8.5, S: 8.5, W - 7.5) - overall score 8.5
- Work experience in NOC 0651 since 2013 - present and in NOC 0014 since 2001 till present. Work Experience in NOC 0 Category - 5 years.
- We will bring 15,000 dollars as funds - I understand this should be enough for a family of 2.
My husband (secondary applicant):
- IELTS scores (R:8, L: 7, S: 6, W: 6) - overall score 7
- He didn't graduate from the university (dropped out after 3 years), we wrote 3 years University Program, not completed. Should we have written High school diploma? - No ECA for him (but I know it's not mandatory) and I really don't think 2 points would have made a difference.
We have no relatives in Canada, nor work experience there. Any suggestions? Should we apply to Job Bank? Should we do a province nomination? If so, which province doesn't have too many requirements and we would be eligible for?
How do we increase our chances?

Did you specifically mention $15000 as your funds? Because that makes you ineligible by a couple of hundred dollars
