Yes you can. Attach her account statement and the bank letter. Draft a letter saying that your wife is authorizing you to use these funds as your proof of funds. Print the document and get it signed by your wife. Attach it in letter of explanation. People have done this before and got their PR.

The passports must be valid for another 6 months at the time of PPR AFAIK.

However, see if you can get your Passports renewed before you submit your application. If you are not able to in spite your best efforts, you can submit your application with your current Passport and then update IRCC at a later point in time with the renewed PP by raising a CSE.
