An EOI might cause issues unless it was for Manitoba.
I think one of the main things they are interested in is that you plan on moving to and living in Morden. To have an EoI in another province would suggest you plan on moving away.
You wouldn't want to go through the process and expense of an exploratory visit just to be turned down by the MPNP at a later stage.
On the other hand having an EE profile shouldn't make a difference and would actually speed up the process.

Your IELTS were valid when you applied, this should be fine at least they know you have adequate language skills, but you will have to retake them again before your exploratory visit. I would suggest you retake them as soon as possible.
Mine ran out between my Skype interview and exploratory visit and I had to rush to retake them also. It's a pity they only last 2 years.
