If I obtain a CoPR + one time PR VISA inside Canada, leave the country and come back, and still have an Open Work Permit + VISA. Can I use the latter to enter Canada instead of the CoPR and one-time PR VISA?

No. Per my understanding, once you "land" as a PR or present yourself for landing after copr issual, effectively it cancels all your previous visas.
I'm not sure how the process is executed since I am not in that situation personally.
