Hello there,

I'm an Egyptian citizen and have a permanent residence in Canada. My mother is currently visiting the USA and she's planning to stay there for couple months.
I'm wondering if she could apply for a super visa during her stay in the US and ask for an interview there.

I think your mother can try to apply for supervisa in US. The processing time is about 32 days in US. There are only 2 locations. Los angeles and new york. So if she applies as soon as she is in US, it may get done in time before her flight back home. If it takes longer, I suspect it will due to recent strike and huge backlog in applications. So then it will totally screw up your mother's application as she applied while in US while back in Egypt.

My advise is to wait for your mother to return to egypt before applying for supervisa. Plus with your mother record of obeying the US travel stay, it would be easier for your mother to get supervisa.
