I work in software development and I'm thinking of taking a job in NYC. My spouse would have to stay in Canada while the process goes through and she gets PR.
As long as you are sponsoring your spouse outland and assuming you are a citizen, it shouldn't be an issue. You'll need to provide evidence to show that you plan to relocate to Canada once PR is approved.
I have seen another person's inland app rejected due to the sponsor living in another city in Canada for work during the application process.
If you intend to take a job in NYC, you would have to withdraw your inland app and re-submit an OUTLAND app from scratch.
And even after she gets PR status, keep in mind Conditional PR/condition 51 requiring you to continue cohabiting with your partner, may still be in effect (although this rule may be repealed shortly)

Not a good idea. A friend of mine applied inland for his spouse and worked outside Canada during the process. Of course, the application was naturally denied on account that he was not living with his spouse inside Canada.
I warned him that this was going to happen. Being a moron, he repeats the application inland again and continues to work outside Canada. He says he will come back for sure in 5-6 months time for good or sooner if there is an problem with the application. Sure whatever bud. He is not being fair to his wife while she stays by herself in Canada and continues to jeopardize the application the 2nd time.
