I am nervous as i am planning my trip soon as per my AL that expires on July 19th, any guarantee this will not be rejected by the airlines i am flying with? i believe all they need to see if the AL along with my passport and expired copr (this is what was mentioned in the letter).
Any other steps i should consider before just showing up at the airport?

Did they send an email with your med request? If they emailed you then you need to go back and read that email because they explain what to do if you cannot complete your meds in 30 days.
It was an automatic email from donotreply@cic.gc.ca to say to check my account for a new message. In the message they say to contact the IRCC office that processed my documents but my VAC is closed at the moment. That’s why I wanted to know if there was a way to contact them about an extension.

If I remember correctly she downloaded ArriveCAN. She couldn't book the quarantine hotel from here because they only had one number as contact for booking the hotels and it was always either busy or she was put on hold for hours. But when she arrived Canada, she was able to pay at the hotel. At the time, they had police officers at the airport to enforce hotel quarantine rule
It depends on a case to case basis. A person in this group got it in 10 days. I got mine in 25 working days but you will definitely get it. Just hang in there.
