I just got a job offer from a Canadian Employer and will start my full-time job on 4th January as well as my work permit process. The company seems to support relocation and I will start the process at the date stated earlier.
My question is: how long does it take to get the work permit? Does it differ from a company to another? Also, I'm married and I have a child, is it preferable that they apply for the Open work permit at the same time as me or it's the same process if they will apply afterwards?

What type of job is this? Work permits are issued from immigration, companies don’t issue them
Are you sure this is a legitimate job offer ?

So has the company even started the LMIA process? They have to complete a market assessment and show no Canadian can be found and how your hiring will grow their business. This takes months. Then if positive, you apply for a closed which will take another 4-8 months. You would apply for your family at the same time.

@scylla, at the same time, I have an express entry profile with WES education and IELTS / TEF with a score of 388 (before 50 points of the job offer), so what do you think I should aim for? Work Permit or PR?

388 is far too low to be selected under EE. Right now you need around 470 to be selected under Express Entry.
You will only qualify for the 50 points once your employer obtains an approved LMIA. And even then, your score will still be too low for Express Entry.
