I'm currently sitting at 445 with the CELPIP result from 2015. I am missing out on a whopper 20pts (CLB 9) because of speaking. I purchased a great deal of official CELPIP materials, and went over every single detail on speaking. Frankly speaking, I don't believe I'm a CLB 7 speaker in real life, however I just had a hard time improving my CELPIP speaking score.
I've submitted a re-evaluation of speaking for my latest test, and hopefully it bumps up the pt (even 7->8 would make me 448 in EE Entry).
I think you should give ielts a go. I could never speak to a computer. It's as good as speaking to a wall. If you prefer speaking to a real person, the ielts speaking section has a real person to speak to. May be you could score better that way. If you are shy and reserved, then speaking to a computer will be a respite from facing a person.
