Below is my story and question.
Started working full time on 20-May-2019 (40 hours a week).
EE profile was updated with points for 1-year experience on 1-Apr-2020 (CEC).
Received ITA on 9-Apr-2020
However, I am pregnant and my due date is 23-May-2020. So, if the baby comes early for e.g. 15-May-2020 and I go on Maternity leave, is there a chance of rejection considering Visa officer will say that I did not complete an entire 1 year i.e. 20-May-2020.
I will advise you if the baby come in on may 15, take 5 days vacation to complete the rest, then go on mat leave. I am back to square one right now after it took them 11months to reject my application because of mat leave issue

I have entered the file in pool and confused about the work experience update. I have completed 2 years in a company and will be rejoining them back after an year of mat leave.
Please advise what I need to update in EE profile for the work experience section?
- do I need to update the last date of working before started the mat leave or keep it as my current job and explain in the reference letter about the mat leave.

I don't think you can count time on parental leave as work experience. You would have to state in your EE profile that you stopped performing that job at the time your parental leave started, and then start a new one once you returned from parental leave.
