CEC - is based on your past experience so anything you would do post application does not matter to CIC.
You have to ensure you maintain your admissibility to Canada though (like good health, no criminal/terrorism activity, etc.).

This would be easier to answer if you would state what the concern is. CIC will verify your work experience, which means they could contact your former employer. Your work experience (and employer) after you apply are irrelevant to the CEC class.
I had applied for PR under CEC last month and planning to quit my current employer, If I get a suitable opportunity.

Technically it doesn't matter who you work for after you apply, as CEC considers only your past experience. But if you have to leave, I would suggest you leave your current employer with good terms (Don't burn the bridge you just passed, like they say), because you might need them to verify your duties with them, should CEC decide to contact them.
If currently you are working with Employer XXX, I would imagine, that you are on Work Permit status etc. Usually on the work permit it provides the conditions, like you are allowed only to work with Employer XXX. Is that your case? If so, wait for PR approval before you work for Employer YYY or ZZZ.
