With a single entry Canadian visitor visa, can she visit Canada multiple times from the US (assuming that she doesn't go outside of the US & Canada in-between)?

When she enters Canada and is admitted for 6 months (sometimes less), she can re-enter on the single entry visa from the US during the time perod she was admitted.

Yes she can apply for a multiple entry visa and there had been posts about multiple entry visas valid for up to 5 years. But as to her being granted n-year multiple is up to the visa officer.
What do you mean multiple entry visa longer than 6 months? Do you mean the validity period of the multiple entry visa stamped on her passport? If so, then the answer is yes.
