I am in the process of finishing the spouse visa, when now suddenly my husband and I need to move back to NZ ... I will apply for a WHP and hopefully get a job soon, but i have to quit my job in canada when we leave.
On the application I will have to now change it unemployed even though hopefully in a month i will be employed again.
Can I still sponsor him?! I have money saved up in the account and have never been broke or on welfare

It depends on the date you sign the papers, when everything is complete you put a date at the bottom of each form with a signature, if you are unemployed when signing the paper then put unemployed if you are employed on that date of signing then put employed, never withhold information from the CIC it is better to tell the truth.
Moreover Spouses with has no dependent children are exempted from financial requirement, so you don't have to be employed or have to have a specific minimum income, but you should not be welfare and bankruptcy, whether you are on welfare or bankruptcy it will all appear on the option C form , which needs to be accompanied with your application
Here is the Exception to minimum necessary income
Section 133 subsection 4 of the Immigration and Refugee Protection Regulations:
Exception to minimum necessary income
(4) Paragraph (1)(j) does not apply if the sponsored person is (a) the sponsor's spouse, common-law partner or conjugal partner and has no dependent children;
(b) the sponsor's spouse, common-law partner or conjugal partner and has a dependent child who has no dependent children; or
(c) a dependent child of the sponsor who has no dependent children or a person referred to in paragraph 117(1)(g).
if it can help as well - my partner was approved as a sponsor, despite being a student for the last 3 years, and with only 5 months of work ( summer employment) for the last three years... and a student loan.... and he got approved without trouble.
As long as you have a plan on how you will support yourself and your partner when you move to Canada, then you'll be approved ( if you are on on welfare etc as you explained).
