In my expression of interest, I currently have work experience from a previous employer that will be difficult to get the right documentation from. As I'm set to get a Validated Job Offer soon, I won't need that work experience to be invited to apply or to have my CSQ approved. Can I just remove it from my expression of interest when I update it with my VJO?

Yes you can delete work experience. Just be careful by deleting the experience you may loose points too.
