My spouse recently completed her studies and is about to apply for her PGWP. I’m currently on a spousal open work permit (SOWP) that was tied to her study permit. Can I continue working while her PGWP application is in process, or do I need to stop once her student status ends?

You can work until your expiry.
 
Yes, you can continue working on your SOWP while your spouse applies for the PGWP, as long as your permit is still valid
