My spouse is here on a valid work permit w/ LMO from Korea (valid until Dec 2014). If we apply for PR INLAND in January (2014) under spousal sponsorship, and include an Open Work Permit application in it, then once stage 1 approval is done, they will process the OWP, and my spouse will be given implied status until the OWP completes, and an implied bridge permit until it's received.

Your spouse can continue working under "work permit implied status" with the current employer until OWP is received. After your spouse gets OWP, she can legally work for any employer other than the current employer. This is based on the premise that you submitted your application while the work permit is valid.
If you do not submit an OWP with the application, your spouse can still work under implied status however your spouse can only with the current employer through the entire process until PR is granted.
