Well, I don't know how you prepared it all, but here's a rundown of what I did:
Folder #1: Sponsor Forms & Documents
Folder #2: Applicant Forms & Documents
Folder #3: Proof of Relationship
Folder #4: Proof of Communication
They're 2" thick manilla envelope folders. I paperclipped all my pages together and labelled them. I have no staples anywhere, they can easily take pages apart. I have an outline in each folder. Each folder has a clip to secure it and I will be mailing it in a medium sized box... Fedex.
When I first sent off our package, I used an expandable folder. We had application returned to me for a missing signature and they didn't use the folder, just used my paper clips and elastics to keep it together in a big envelope.
So paper clips, elastics and an envelope should be good.
This is how I put ours together. I then put it in a priority Canada Post envelope and sent her off.
I organized everything in the order that it asked on the checklist. For the supporting documents, I had different chapters for different things then used card stock to divide the chapters. I then used stick on tabs to label the chapters. I paper clipped everything then I used two rubber bands to keep it all together. Hope this helps.

That is exactly what mine looked like (and the way i organized the documents) except the tabs were across the top and it wasn't nearly as thick. Paper clips, sticky tabs and good old rubber bands! And I LOVE LOVE LOVE that you took pictures of it!!!

Yay for pictures. Glad you are participating nyssa! Lol.
And of course I am taking a picture of it. That was my whole life for 10 months and still is so I figured the least I could do is still keep a picture of it.
Definitely no binder! They tell you that specifically. Binders are bulky because they have to be bigger than the contents, plus they are heavy, the covers are larger than the sheets inside, etc. I'm sure that is the reason they don't want them.
Some people have used staples and had no complaints, but paper clips are probably better because they will want to organize the pages in the way that they prefer and paper clips are easier to take off than staples. Make sure that a name and if possible an ID#, is on every page of additional information.
I used 5 poly clear envelopes when I sent in our application. (Folder #1 - Sponsor, Folder #2 - Principal Applicant, Folders 3 & 4 - Additional Supporting Documents of Sponsor & Principal Applicant, Folder #5 - Photographs
