The problem is that flagpoling would mean leaving the country which you are not supposed to do during an inland application. Also remember to apply for OWP with your Inland application if that is what you chose to do.

And I had no idea UK allowed applications in October-November for next year! For us (Sweden) we could start apply during the first days of January and that was it.

And yes, you are still technically applying for IEC from Inside Canada as you are not in the UK when applying. While you can apply here remember that it will take some time to get all the appropriate documents sent to you. But I am sure you are prepared for this.

I just looked and the time difference between applying from within Canada and outside Canada goes from 1m+10m=11months for outside Canada, and 11m+14m=25months for inside Canada.

Plus we want to travel to Mexico during that time so it's pretty obvious that I'm going to have to apply from outside Canada. 2 years waiting with 1 year working in IEC plus 1 year extension if I'm lucky is too much of a gamble. I also am not sure if I will need to travel back to the UK in a hurry as my dear mother isn't doing too good these days and who knows..? I wouldn't want that to jeopardise everything else. She wouldn't either.

I think I will apply for the spouse-sponsored PR from an outside office (London, UK) in once we are married in November and then apply for IEC when it opens for 2014. During that time I will also need to request a visitor extension so I can stay here for the duration of that processing. Sound good?

I have looked at the processing times comparing between inland and outland applications, coupled with the fact we need to travel during the processing to Mexico means I will be applying outland so this is not a problem any more, at least I don't think.

We spoke to a couple who applied last year for this year and the applications opens Fall and I think I saw that on the IEC information, too.

Another user on here that posts a lot and seems to really know the process had also said that we could apply inside or outside and CIC in fact encourage you to apply outland. I should probably call CIC to get clarification on this, right?

Yeah. Preparation, planning and organisation I am hoping will keep us as safe as possible. Pre-empting and having plans B, C, D and of course E...

I looked in to this on the CIC website. I did the 'Come to Canada Eligibility' test for an International person and it came back with the following as part of the results. I made sure to put down that I am currently 'living in' Canada, even though technically I am just a tourist at this juncture:

Family Class: Spouses, Partners and Dependents (In Canada)

You may be eligible to come to Canada through Family Sponsorship..
First, your family member who is a citizen or permanent resident of Canada must apply to be a sponsor and then be approved. When your sponsor receives positive results from her/his sponsorship assessment, you have one year to complete the forms and gather all the required documents. You should send them as soon as possible to the appropriate visa office.
Note: You also have the option to apply using the outside Canada process, if you prefer. In some cases, depending on the visa office processing the application, it can take less time.

I will also try and get a hold of some body at CIC direct to clarify that I can have all correspondence for the application sent to me here in Canada at my fiance's house and it still be OK.

I gotta say to all those helping: I am so very grateful and although initially worried about everything, I am feeling a lot better now.
 
You can apply within Canada as long as you have a UK address. They changed the rules for the IEC visa this year that you can apply even you're not outside Canada. I applied for my second IEC, told them that I have a German address and are already in Canada with my first IEC. No problem at all.

The process was supposed to open in November 2012 but didn't start before February 2013. So be patient if this is the case for the 2014 visa, too.

I would apply outland. London is one of the fastest VO and you are free to travel during the PR process.
