My work permit expires on August 13 and I have booked flights to leave Canada back to Australia. However with the strict arrival caps currently in place - I'm trying to figure out the best back up incase my flight is cancelled and I decide to stay in Canada and work to support myself longer.
My current permit is an open work permit and currently working for the same employer I came into Canada with.
Any advice on the best course of action here? Should I apply for an IEC extension, apply for a brand new IEC, apply for a work permit?

Probably your only option is to apply to change your status to visitor, stop working once your IEC expires, and then remain in Canada as a visitor until you are able to leave.
Otherwise if you want to keep working, you would need an approved LMIA from your employer. I don't think you have enough time to do that before your IEC expires.
