To my knowledge, in the majority of cases VO's don't ask for additional proof unless they find something fishy on your application. The job letter you sending with the application serves the purpose of proof and sort of agreement that you have had with your employer. For instance, CIC specifically asks for a job letter to be printed on a company's letterhead and including the key words "Full Time, Permanent" these keywords go long way, especially if you're applying under arranged employment category.
In arranged employment category, essentially you getting your PR based on the job you're holding at the time of sending your application and during the process. It's fair to say if you no longer have that job, you will be deemed not eligible for FSW because CIC issuing you PR based on a permanent job offer.
In addition, it all depends on if they follow up with your employer and at what stage of application they do it.

Hi big boy, i was planning to apply for BOWP as i am now eligible ( closed work permit will expire on April 2015 ) however, it is only for 1 year. Our LMIA is still in process now so i'm wondering if i can apply for closed work permit while i'm on bridging open work permit here in Canada when the new LMIA comes. ( but hopefully i won't need it if i get my PR status, just in case)
Hey reannox, I don't think you will need LMIA anymore.
Since you already eligible to apply BOWP, and it's valid for 1 year.
That's should be enough time for you to get your PR.
And actually that's the purpose of why CIC they issue BOWP.

superman has said it right in the post below. CIC bridges work permit for only one year but the beauty of it, is you not glued to the same employer for another year. Now you've the freedom to change jobs if you wish.

It took 5 mnths to get ppr after medical. Though the time vary from office to office. Yes ppr is the next step after medical and then u get your visa stamped on passport.
