Guys, got nomination under EEBCPNP, last date to submit 17 December,2021. should i proceed with this or wait for CEC? because a lot of express entry Pnp applications are stuck.. any suggestions?

If u already have an EE application in progress, submitting a new application (PNP) won't really help.
 
Got a ghost update earlier today. My medical results status changed from not needed to "You passed the medical exam". My medical expired last month and didn't do remedical. Is it a sign of progress in my application?

You check your GCMS notes. Alternatively you either ask about it in your webform or you call IRCC and ask about it. GCMS notes are the best bet because IRCC is not responding to calls and webforms because of the Afghanistan crisis.
