DF means Depot Federal in french or Federal deposit in English, so it's the date when your application is received by IRCC
The XEP number is a temporary AOR, you will receive the official AOR after at least one year.
For example I have been waiting for 14 months and no AOR yet.

I see someone posting many from July 2020 are getting AOR, so you may be getting it soon

I have received my eCopr and submitted my photo and address confirmation on the pr portal. Been around two months and it is still under review. Realistically I’m not expecting things to move extremely quickly but was wondering how long approximately this stage took for others?

If you are asking if you can change job, I did the next month from my CSQ reception and just before I applied in federal.

We are, but very slow, random and unpredictable. I was expecting it by the end of this month. But it seem that lots of May and June applicants are still waiting.
