The processing times are just estimates, as I have been reading. But as per CIC's website the time between VAC and IRCC and otherway and the wait time to submit the biometrics, does not count as processing time.
what did you attach in the purpose of travel, just the ticket?
I don't think "not having a ticket" would reject her visa because my mom got her visa and we didn't book any ticket in advance. But also, in the purpose of travel section we attached my brother convocation invite.
In the purpose of travel, we attached a letter from her stating that she will come only to spend some time with me. Since shes a widow, she will have to return to India to manage her property. We attached her property details. Also she has all her 6 siblings and my elder sister in India . And that she's financially sound to take care of herself.

the time you need to give your biometrics
So for my mom, it took 22 days in total but IF I see the working days and ignore the transit between VAC and IRCC and her wait time to get the biometrics done, it was under 13 days.
Then you are good! I applied for my grandmom's visa (father's mom) along with my mom. My Grandmom is a widow, no siblings alive. And all she had as home ties was her house and her pension. She has got her visa.

By the way, is there any issue if we do not apply for Super visa, and instead for visitor visa for parents? I've heard people's visa getting rejected on those grounds too.

I would wait to apply for my mom's super visa, for the reason;
1. She's still working and cannot take long leave anyways
2. Since I just got PR (Jan 2019) I didn't want her to get Super visa rejection, as read in forum this has happened.
Usually after getting biometrics confirmation it takes 1 week at most. For some people it happened on same dsy or 2-3 days so. All d best, you will get PPR soon.
I would wait to apply for my mom's super visa, for the reason;
