Talking about those, anyone kknow if you can change the date of your landing interview appointment? Or is what they decide, the day that it is going to happen?

Yes you can reschedule it after they send you the interview date

Would you be able to provide 12 months of phone bills and utility bills with both names and same address, as well as joint bank account or credit card statements showing that you are actually using it for a "shared life and a relationship of some permanence where the two parties are interdependent and combined their affairs economically" not just simply for immigration purpose ? Does the lease and insurance you provided cover period of 12 months ? I may be wrong but I am guessing the reason why VO is asking for more proofs is because some of the evidences don't cover 12 months of period maybe ?. Because in my opinion those evidences cover the period less than 10 months may not be solid enough to convince VOs, therefore they may require a good explanation. I think your evidences are good but maybe just a bit lack of continuity. Feel free to correct me if I am wrong :)

Not sure if you mentioned sending it but have you sent a photocopy both of your driver's license? You can also send your new NOA from your tax returns last year. Those would be some good official documents to send. As well any invitations you've gotten by mail.

Etobicoke is among the busiest offices. Definitely takes a while to get an appointment date.

Etobicoke and Vancouver are usually the ones constantly mentioned in relation to long wait times and delays when it comes to scheduling the appointments.
