Can I attached 4 PDF in one email for the request iteam? Because they said in a single package
I am not sure should be one PDF or more but in one email??

Hi Mimimo, I would advice following.

Type one email, attach four attachments and type the details of all four documents in the body of e-mail with reference to this e-mail from IRCC.
However, best way to submit it is uploading them in My CIC. If you have access to MY CIC and you can upload the documents in there, type an e-mail with 4 attachments after document upload on MY CIC. This will be the best back-up.

I have only 2 NOAs currently. I never filed returns before landing as permanent resident.

You can open it using the partner links. So if you bank with RBC, you can go to sign in page and use partner log-in option and use your RBC bank online id and pwd to log into your My CIC account. Then you can link your application there and submit the documents online.

You do not have to sign IMM5562. The form doesn't need signature. The langage in the email is very general and common format so its OK for you.
