I currently have a visitor visa to Canada that was issued earlier this year. I wanted to check if there is anything I could do on my end to get a work permit sooner or be able to join the new role in the next 4-5 weeks. Can I start working while my ICT is in process?

You cannot start working in Canada on visitor status without the work permit being approved. That will be working illegally and violating the terms of your visitor visa.
There's really nothing you can do on your end to have the submitted work permit processed sooner.
Are you in the US? Can you wait out the processing time in the US and are you authorized to work from there? You must already be working for this company if they are going for an ICT.
