I graduated in May 2023 and started working full time without knowing the rule that we shouldn’t work without applying for PGWP. I got my PGWP approved in June. Now my concern is with regarding to CEC draw. Which month should I mention as my starting work month.

It's not like CRA won't have a history of the work. Remember, there's no time limit for misrepresentation.
