[1] Do we need to send the "copies" of all the work-permits in the last 3 yrs ( I have 3 work-permits in last 3 yrs) OR just the "copy of the latest work-permit" would suffice ?
[2] To claim experience for 2014 (though I have company reference letter saying I 'm currently employed with them) + work-permit to prove, should I have to send the copy of my offer letter OR "pay stubs" from Jan-2014 to Till date, suffice ? I have T-4s and NOA for 2012, 2013. Thinking of sending the 2014-Jan to latest "pay stub" for 2014 experience.

1 - Document check list clearly states - A copy of your most RECENT work permit or authorization.
2 - Letter should prove it, but since you won't have T4 or NOA for 2014, you should send out any supporting document you can (e.g., pay stubs). Note - this is not mandatory.

1- Document check list clearly states - A copy of your most RECENT work permit or authorization.
Recent means the one that you have right now or the last one you had.
2- Make sure your letter will be good and contain all that information from document checklist. If you don't have T4 or NOA, please attach pay-stubs just because:

It's simple as it is. Some of you guys are over-thinking. You don't need to send all copies of work permit u had in the past, they will check it through your UCI number.
