Changing jobs or quitting won't affect your chances of pr as long as all the information you've provided to claim points is true and all documents are genuine.

If out of 3+ years of your experience, at least one job is for continuous 12 months under one NOC/employer, you are eligible to apply under Express Entry programs.

Your three years of work experience will get you the maximum points so you only need to provide proof for that. You can mention your freelance work in the personal history section while filling your application after ITA.
