On the front of my PR card, it says 'Expiry: 1 May 24'
I have been living in Canada for past 5 years, went on vacation for few months.
I have already applied for citizenship, already completed the test.
If i dont renew my PR card, will my PR 'status' be revoked?

No, only your PR card expired in 3 months.

If you want to travel outside of Canada before you get citizenship I would suggest applying to renew your PR card. In general idea it is a good idea to have a valid PR card so you are able to easily travel if there is an emergency before you are a Canadian citizen.

What about employment, if i show them expired PR card, will the employers accept it? Is there any other proof i can show to employers that im still a PR?

If you have a SIN# no issue. PR card is primarily a travel document so employers should not ask for it.
Thanks

No. Unless part of your job require you to travel outside of Canada. (they usually won't ask you for your PR card. They will just ask if you can travel.)
Still a good idea to renew your PR card. Unless you really have zero intension of travelling.
Apply to renew your PR card now, instead of scrambling to get an urgent renewal if you unexpectedly need to travel.
Citizenship application is anywhere from 3 to 12+ months.
Renewal means one less thing to worry about with zero downside, unless you really don't want to bother with the bit of time and effort it takes to prepare the application.
