Emirates airways is best, Luxurious and safest but it is costly.
But most of flights to North-America go Via European destination. SO Lufthansa, British airways, swiss airlines, our desi (Jet airways)Local carrier, Air France would be good and economical for you.
Note: Jet airways may provide you facility to carry extra luggage i.e 3bags of 23kg instead of 2bags if you tell them you are student and going for first time in canada. This offer is seasonal mostly for september session. You can always try with other airlines also to see if they provide this offer. Call airline's local office to confirm.
There's no such thing as 'best and economical' airline. Throughout the year, the cheapest fare will keep on changing from one airline to other. So, if your priority is price, then I suggest you go and check www.ixigo.com You can check prices on it from makemytrip,expedia,via,and few others, all at the same time.
Now, if your priority is baggage allowance then just to let you know, you will normally get an allowance of 2 pieces of 23 kgs each+ 1 piece of hand luggage upto 8-10 kgs+a laptop bag. If you want more baggage then I suggest you specifically look towards Jet Airways.
As far as your journey is concerned, don't try to book a flight route with too many connections or a connection of a very long duration, unless that saves you a lot of money in comparison to a comfortable journey route. It's just not worth saving a few bucks if it means you have to spend hours and hours at any airport for a connecting flight.

I have personally never been on Cathay Pacific but I have heard good things about the airline. Since you're going to Vancouver, you shouldn't pick a flight which is trans-atlantic i.e via UK/Europe/Middle-East because that will be quite silly. So, considering your options, Cathay Pacific would be a good choice in my opinion. Do make sure you get enough baggage allowance though. The other options you have are China Airlines or other East Asian airlines, so Cathay Pacific sounds like a better option.
Though you have already booked your ticket and seems you got a good deal.
JUST FYI for all,
Lufthansa is also offering great deals. apart from a ticket ranging from 36 to 38k to canada from India and extra luggage...but they are also offering student discounts which is minimum 3k for sure and upto 10k... so worth giving a try. and you do have a choice for a non-stop flight to canada or a halt in between.
